The honest requirements: it must be planned into the kitchen drawing (housing height, water line, clearances), it belongs to the kitchen rather than to you (it doesn’t move house easily), and the craft ceiling is the machine’s programme — superb, though the most obsessive milk-drinkers sometimes want more manual say.

The case for countertop

A Jura or De’Longhi automatic asks for nothing but a socket. It arrives this week rather than with the kitchen; it upgrades independently of the cabinetry; it travels to the next house.
