Steam, Combi or Convection: Choosing Your Oven

Stand before the oven wall in any of our showrooms and you’re looking at the most consequential appliance decision in the kitchen — not because ovens are complicated, but because the combination you choose shapes how you’ll cook for fifteen years. Three types, honestly explained.

Convection — the workhorse

The classic built-in oven: a heated box with a fan circulating the air. Everything the Indian home oven repertoire asks — baking, roasting, grilling, the Sunday biryani finish — a good convection oven does superbly, and the best ones add sensor-driven programmes that take the guesswork out of temperature and time. If a kitchen has exactly one oven, this is it.

Steam — the specialist

A pure steam oven cooks with saturated moist heat: vegetables that keep their colour and bite, fish that never dries, idlis and dhoklas at professional consistency, and reheating that revives rather than toughens — yesterday’s rice emerges as if fresh. What it doesn’t do is brown; there’s no crust in pure steam. That’s why steam ovens are almost always the second oven, not the only one.

Combi-steam — the argument settler

The combi-steam oven does both in one cavity, and mixes them: dry heat for browning, steam injected in percentages for everything else. Bread with a real crust and a moist crumb; a chicken that roasts golden while staying juicy; vegetables and grains done without a stovetop. It’s the appliance our planners are asked to demonstrate most — and the demonstration converts, which is precisely why the showroom keeps them hot.

Composing the wall

The compositions we plan most, in ascending ambition:

  1. One convection oven — the honest minimum for a serious kitchen.
  2. Convection + combi-steam — today’s default luxury pairing: the combi handles steam duty and second-oven capacity on festival days.
  3. Convection + combi + warming drawer — the drawer under the ovens holds a course at temperature while the next one cooks; hosts learn to love it fast.
